Are you in a pinch, and would like to put together a light and healthy lunch? I have just the solution. Inspired by one of my fellow co-workers, I’ve modified a bit of her recipe for some simple wraps. And you can grow some of the ingredients right in your own backyard.

Da-da-da-daaaaa…Now onto the recipe!

Step 1: Fill a bowl with the Sprouting Seed Mung Bean. This ingredient adds a refreshing taste to each bite, and you’ll love the crunchiness.

Step 2: Carefully dice the Pepper California Wonder (Organic) into tiny pieces.

Step 3: Get a generous bunch of Lettuce Salad Bowl Mix (Organic).

Step 4: Combine all vegetables together in a large mixing bowl. Add kalamata olives, feta cheese, carrots like the Carrot Purple Haze (Hybrid) and the sweet Tomato Mosaico (Hybrid) depending on your preferences. Oh, and to make this a more filling meal, my boyfriend suggested spreading some hummus on the tortilla before you wrap it up.

Step 5: Add the mixture to the center of a whole-grain tortilla, and fold it up so it’s easy to eat.

Thomas Edison Day - I’m sorry…this man was not just an inventor, he was a GENIUS! I bet you didn’t know he invented over 1000 inventions. WOW! My mom has been trying for years to think of an invention. She’s come up with a few; however, there was some variation of it already in stores, so she gave up. Although I doubt she gave up entirely!
