National Fritters Day - Oh man, I do not like the gooeyness and plainness of fritters. My mom does though. Every time I make a coffee run, she requests a fritter. Why? What’s so good about fritters anyhow? All it is is any kind of dough that is fried, with a bunch of different dried fruits inside. Doesn’t sound that appealing, does it? OK, well maybe the fried dough part sounds delicious. I love fried dough. Now that I think of it, my family makes a variation of the fritter during the holidays, and I’ve been eating them all these years. How rude! Well, maybe it’s a fritter. I’m not really sure what you’d classify deep fried potato dough that’s shaped as a doughnut. Regardless, whether these two snacks are related or not, I say you find your best fritter recipe and fry up a batch. I may not be the biggest supporter of fritters; however, it’s worth a shot enjoying one of these sweet and savory snacks and they’re super easy to make. All you really need is a pot of cooking oil and you drop ’em in. They literally take minutes. You know what goes great with fritters though? Coffee! I say you check out CoffeeForLess so you can enjoy dipping your fritter in your coffee. Special Education Day - When I was in post-secondary and deciding on what to do with my life, I considered special education. I always admired special education teachers and their patience with students who have physical and learning disabilities. I thought maybe I could do what they did since I like to think of myself as a helping and patient person. I also have a special place in my heart for kids with disabilities and find working with them such a rewarding and challenging experience all in one. Needless to say, today is a great day to honor and reflect upon the Special Education Law signed on December 2nd, 1975 that gave all students a fair chance at a proper education. Pretty amazing stuff huh? If you’re looking for ways to celebrate today or take part, perhaps you can head to your local community center and see with your own eyes the progress and potential in special needs students.
